Our Story

Kolonel is a family-run business that was founded by two siblings with years of experience in the culinary arts, Chef Nik and Shefalee, in July 2021.

Chef Nik has been honing his culinary skills since the age of 17 and has worked in various 5-star plus hotels across Mauritius. Shefalee, on the other hand, has also worked for renowned 5-star hotel in Mauritius. Her love for traveling and experiencing different cuisines from around the world inspired her to open Kolonel with her brother. Shefalee manages the day-to-day operations of the pizzeria and ensures that everything runs smoothly.

At Kolonel, we are always looking for ways to innovate and bring new flavors to the table. Chef Nik has taken traditional Italian recipes and combined them with iconic Mauritian ingredients to create a unique fusion cuisine that is full of flavor and surprises.

Our Mauritian-inspired pizzas feature such ingredients as succulent prawns, local herbs, and exotic spices that add depth and character to the traditional Italian flavors. Chef Nik's passion for food and his exceptional skills have helped to create an experience that is both authentic and innovative.
